Strawberry-Balsamic Spinach Salad

This recipes requires a balsamic reduction for the dressing. To make a balsamic reduction, simply simmer 1/2 cup balsamic vinegar with 1 Tbsp honey or brown sugar until liquid is reduced by half and sticks to a spoon. Let reduction cool and store in air tight container in fridge for 3-6 months.

Ingredients

Salad

2 cups organic spinach

1/2 -1 cup chopped fresh, organic strawberries

1/2 cup chopped pecans

Dressing

1 Tbsp Balsamic Reduction

1 Tbsp Extra Virgin Olive Oil

1 tsp. ground dry mustard


Directions

Whisk dressing ingredients together. Place salad ingredients in large bowl, pour dressing on top and mix well, serve and enjoy!
