Pumpkin Protein Cookies

3 Dozen Cookies

Ingredients

2 cups oat flour

1/4 cup hemp protein powder

1 full can 100% pumpkin puree

1 tsp. baking soda

1 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. ground ginger

1/8 tsp. ground cloves

1/2 tsp. salt

1/4 cup molasses

1/2 cup no sugar added applesauce

1 tsp. vanilla

1/2 cup raisins

1/2 cup chopped pecans

1 Tbsp Coconut oil (for greasing pan)

Directions

Preheat oven to 350ยบ and grease baking sheet with coconut oil. Mix all wet ingredients in large mixing bowl and dry ingredients (except raisins and pecans) in medium mixing bowl. Slowly add dry ingredients to wet ingredients while mixing until thoroughly combined. Next, add in raisins and pecans. Spoon the dough onto greased baking sheet and bake for approximately 15 minutes. Once baked, remove from pan and cool on baking rack.
