Oatmeal Bake

For a gluten free version, use GF Oats.

20-25 minutes

Yields

12 servings

Ingredients

4 cups old fashioned oats

2 tsp cinnamon

1 tsp baking powder

1/2 tsp salt

2 1/2 cups unsweetened almond milk

2 tsp vanilla

1/3 cup maple syrup

Juice of half a fresh lemon

1/2 cup peanut butter or nut butter of your choosing

3 bananas, mashed

1 Tbsp coconut oil - for greasing baking dish

Optional: nuts or berries to mix into bake


Toppings:

fresh sliced bananas

blueberries

cinnamon

maple syrup

coconut whipped cream


Directions

  1. Heat oven to 375 and grease 9x13 baking dish with coconut oil.
  2. Mix all dry ingredients in large bowl.
  3. Mix all wet ingredients in medium bowl.
  4. Pour wet ingredients in with dry ingredients and fold over until mixed. (Optional: mix in nuts or berries of your choosing)
  5. Pour mixture into baking dish and bake 20-25 minutes until mixture is set and begins to lightly brown on edges.
  6. Serve with your choice of toppings.

Notes

Blueberry syrup for topping - mix blueberries with maple syrup in pan, heat on stove until bubbly and pour over oatmeal bake. Top with coconut whipped cream.
