Chop onion, wash kale and tear into pieces (off stem), open beans- rinse and drain.
1 yellow onion, chopped
1 head of kale, torn into pieces off stem
2 tsp minced garlic
1/4 cup vegetable broth (low sodium)
1 can white beans, rinsed and drained
(I prefer cannellini beans)
1 tsp red pepper flakes
2 tsp Italian seasoning
Salt and pepper to taste
You may need to add more vegetable broth depending on the amount of kale you have in your head of greens.
