Greens and Beans


Prep Time

Prep Notes

Chop onion, wash kale and tear into pieces (off stem), open beans- rinse and drain.


Cooking Time

10 minutes

Ingredients

1 yellow onion, chopped

1 head of kale, torn into pieces off stem

2 tsp minced garlic

1/4 cup vegetable broth (low sodium)

1 can white beans, rinsed and drained
(I prefer cannellini beans)

EVOO

1 tsp red pepper flakes

2 tsp Italian seasoning

Salt and pepper to taste

Directions

  1. Heat olive oil over medium heat on stove. 
  2. Saute onions with garlic and red pepper flakes until onions are translucent.
  3. Add vegetable broth to pan, then kale and Italian seasoning. Cover and bring to a simmer to allow kale to wilt.
  4. Add rinsed beans, cover again until heated through.
  5. Add salt and pepper to taste and serve immediately.

Notes

You may need to add more vegetable broth depending on the amount of kale you have in your head of greens.
