Black Bean Pumpkin Burger

You'll need oat flour and flax meal for this recipe. It's easy to make your own, here's a video where I show you how to make your own flours.

Yields

Appoximately 5 Burgers

Ingredients

1 can black beans, drained and rinsed

1/2 can 100% pure pumpkin

1/2 cup oat flour

1/4 cup ground flax

1 Tbsp cumin

1/2 Tbsp coriander

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 tsp. chili powder and/or cayenne pepper


Directions

1. Place all ingredients in food processor, blender, or large bowl.

2. Blend until mixed will and beans are mashed.

3. Form into burgers.

4. Heat oil in skillet over medium-high heat, cook burgers for 2-3 minutes on each side until browned.


Notes

These burgers pair well with spinach, tomatoes, avocado, and mustard. Feel free to experiment with toppings.
